Cherry Almond Bread is a moist, flavorful quick bread featuring sweet-tart maraschino cherries and a rich almond aroma. Easy to bake with pantry staples, it’s perfect for breakfast, snacks, or light dessert. This bread stays tender for days and offers a beautiful cherry-studded appearance that impresses with minimal effort.

Ingredients

1 cup granulated sugar

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 ½ teaspoons almond extract

2 ¼ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

1 (8-ounce) jar maraschino cherries, chopped (reserve the juice)

Powdered sugar, for dusting (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

  • In a large bowl, beat sugar and vegetable oil until well combined.

  • Add eggs one at a time, mixing well after each. Stir in vanilla and almond extracts.

  • In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet ingredients, mixing until just combined.

  • Fold in chopped maraschino cherries gently.

  • Pour batter into the prepared loaf pan and smooth the top.

  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Dust with powdered sugar before slicing, if desired.

Notes

Toss cherries in a tablespoon of flour before folding in to prevent sinking.

Save cherry juice for an optional glaze by mixing with powdered sugar.

For vegan option, replace eggs with flax eggs and use plant-based oil.

Add ½ cup chopped nuts or chocolate chips for variation.

Use gluten-free flour blend to make gluten-free.
