These chewy and sweet Chewy Chocolate Chip Granola Bars are the perfect on-the-go snack, combining oats, crispy rice cereal, and mini chocolate chips. Easy to make, customizable, and packed with flavor, these bars are ideal for breakfast or a quick pick-me-up.

 

Ingredients

2 cups (180g) quick-cooking oats

1 cup (30g) crispy rice cereal

1/3 cup (67g) brown sugar

1/4 cup (60ml) honey

4 Tbsp (57g) unsalted butter

1/2 teaspoon vanilla extract

34 Tbsp mini chocolate chips

Instructions

  • In a medium saucepan, melt the butter over medium heat. Once melted, add the brown sugar and honey, stirring until the sugar dissolves and the mixture is smooth.

  • Remove from heat and stir in the vanilla extract.

  • In a large mixing bowl, combine the oats and crispy rice cereal.

  • Pour the melted sugar and butter mixture over the dry ingredients, mixing until fully combined.

  • Gently fold in the mini chocolate chips, ensuring even distribution.

  • Line an 8×8-inch baking dish with parchment paper or grease it lightly.

  • Press the granola mixture firmly into the dish, spreading it evenly with a spatula.

  • Refrigerate for 1 hour until fully set.

  • Once set, remove from the fridge and cut into bars.

Notes

Storage: Store in an airtight container at room temperature for up to 5 days or in the fridge for up to a week.

Freezing: Freeze for up to 2 months by wrapping individually and storing in an airtight container or freezer bag.

Customizations: Add dried fruit, nuts, or swap the cereal for a different variety like cornflakes for variation.
