These chewy and sweet Chewy Chocolate Chip Granola Bars are the perfect on-the-go snack, combining oats, crispy rice cereal, and mini chocolate chips. Easy to make, customizable, and packed with flavor, these bars are ideal for breakfast or a quick pick-me-up.
2 cups (180g) quick-cooking oats
1 cup (30g) crispy rice cereal
1/3 cup (67g) brown sugar
1/4 cup (60ml) honey
4 Tbsp (57g) unsalted butter
1/2 teaspoon vanilla extract
3–4 Tbsp mini chocolate chips
In a medium saucepan, melt the butter over medium heat. Once melted, add the brown sugar and honey, stirring until the sugar dissolves and the mixture is smooth.
Remove from heat and stir in the vanilla extract.
In a large mixing bowl, combine the oats and crispy rice cereal.
Pour the melted sugar and butter mixture over the dry ingredients, mixing until fully combined.
Gently fold in the mini chocolate chips, ensuring even distribution.
Line an 8×8-inch baking dish with parchment paper or grease it lightly.
Press the granola mixture firmly into the dish, spreading it evenly with a spatula.
Refrigerate for 1 hour until fully set.
Once set, remove from the fridge and cut into bars.
Storage: Store in an airtight container at room temperature for up to 5 days or in the fridge for up to a week.
Freezing: Freeze for up to 2 months by wrapping individually and storing in an airtight container or freezer bag.
Customizations: Add dried fruit, nuts, or swap the cereal for a different variety like cornflakes for variation.
