Ingredients

Fats and Oils

  • 2 1/2 tablespoons olive oil
  • 3 tablespoons butter, divided
  • 1 teaspoon toasted sesame oil

Protein

  • 2 large eggs, whisked
  • 1 pound boneless, skinless chicken breasts or thighs, very thinly sliced and then cut into bite-sized pieces

Vegetables

  • 2 medium carrots, peeled and finely diced
  • 1 small white onion, diced
  • 1/2 cup frozen peas
  • 4 cloves garlic, minced
  • 3 green onions, thinly sliced

Pantry Staples and Seasonings

  • fine sea salt and freshly ground black pepper, to taste
  • 4 cups cooked and chilled rice, preferably short-grain white rice
  • 56 tablespoons soy sauce, or more to taste
  • 1 tablespoon oyster sauce

Instructions

  1. Prepare the eggs: Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium heat. Pour in the whisked eggs and gently scramble until just set. Remove the scrambled eggs from the skillet and set aside.
  2. Cook the chicken: In the same skillet, add the remaining 1 1/2 tablespoons of olive oil. Add the thinly sliced chicken pieces, season with salt and pepper, and sauté over medium-high heat until fully cooked and lightly browned, about 5-7 minutes. Remove the cooked chicken and set aside with the eggs.
  3. Sauté the vegetables and aromatics: Reduce heat to medium, add 1 tablespoon of butter to the skillet. Add diced carrots, onion, peas, and minced garlic. Cook until vegetables are tender and fragrant, about 4-5 minutes.
  4. Add the rice and combine: Increase heat to medium-high and add the chilled cooked rice to the skillet. Stir thoroughly to break up any clumps and to evenly combine the rice with the vegetables. Cook for 3-4 minutes, allowing the rice to get lightly toasted.
  5. Incorporate chicken and eggs: Return the cooked chicken and scrambled eggs to the skillet. Stir to combine all ingredients evenly.
  6. Season the fried rice: Add soy sauce, oyster sauce, and sesame oil to the skillet. Toss the mixture well to evenly coat all the rice and ingredients. Adjust soy sauce quantity to taste. Cook for an additional 2 minutes to allow flavors to blend.
  7. Finish and serve: Stir in the sliced green onions. Taste and adjust seasoning with salt and pepper if needed. Serve the chicken fried rice hot as a main dish or side.

Notes

  • Using chilled rice is crucial to prevent sogginess and achieve the best texture in fried rice.
  • You can substitute chicken with tofu or shrimp for variations.
  • Feel free to add other vegetables like bell peppers or corn based on preference.
  • For a spicier version, add a dash of chili sauce or fresh chili flakes.
  • Make sure to prepare all ingredients before cooking as stir-frying happens quickly.
