Chicken Fried Rice is a savory and satisfying dish combining tender chicken, crispy rice, and a flavorful blend of veggies, all tossed in a tangy Bang Bang sauce. Perfect for a quick dinner or meal prep.
Chicken:
1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes
1 tablespoon vegetable oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
1 cup Bang Bang sauce, divided
Fried Rice:
2 tablespoons sesame oil, divided
4 large eggs, beaten
½ teaspoon kosher salt
2 large carrots, diced
1 large white onion, diced
¼ cup green onions, diced, plus more for garnish
1 teaspoon garlic, minced
4 cups long-grain white rice, cooked and cooled
¼ cup unsalted butter, melted
1 teaspoon lemon juice
2 tablespoons soy sauce
⅓ cup frozen peas
In a large bowl, mix chicken cubes with paprika, garlic powder, salt, pepper, and ½ cup Bang Bang sauce. Toss to coat.
Heat vegetable oil in a large skillet or wok over medium-high heat. Cook chicken for 6-8 minutes until golden brown. Remove from skillet and set aside.
In the same skillet, heat 1 tablespoon sesame oil over medium heat. Add beaten eggs and scramble with a pinch of salt. Once cooked, remove and set aside.
Add remaining sesame oil to the skillet, sauté diced carrots, onions for 3-4 minutes. Stir in garlic and cook 30 seconds.
Add cooked rice, breaking up clumps. Drizzle butter and soy sauce over rice, stirring to combine and heat through.
Add peas, cooked chicken, and eggs back into the skillet. Pour in remaining ½ cup Bang Bang sauce, stirring until everything is evenly coated. Add lemon juice and stir again.
Garnish with extra green onions and serve.
Feel free to swap chicken for tofu or tempeh for a vegetarian option.
Add extra Bang Bang sauce or chili flakes if you prefer more heat.
