This Chicken Pasta is a flavorful, creamy pasta dish featuring tender chicken, sun-dried tomatoes, and a rich sauce. Perfect for a date night or family dinner, it’s easy to make and absolutely irresistible. Enjoy the savory goodness with a blend of Italian seasonings, Parmesan, and fresh basil.

Ingredients

8 oz dried pasta of choice (half a standard box)

1 tablespoon olive oil

½ cup onion, finely chopped

34 cloves garlic, minced

1 tablespoon butter

1 pound chicken breasts, cut into bite-size pieces

½ teaspoon each Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, and pepper

1 cup heavy cream

½ cup Parmesan cheese, grated

½ cup sun-dried tomatoes, chopped

Basil leaves for garnish

Instructions

  • Cook the Pasta: Boil a large pot of salted water and cook pasta according to package directions. Drain and set aside.

  • Sauté Onions and Garlic: In a skillet, heat olive oil and butter over medium heat. Sauté onions for 2-3 minutes, then add garlic and cook for another 30 seconds.

  • Cook the Chicken: Add chicken pieces to the skillet, seasoning with Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, and pepper. Cook until browned and cooked through, about 6-8 minutes. Remove and set aside.

  • Make the Sauce: In the same skillet, add heavy cream and simmer. Stir in Parmesan cheese and sun-dried tomatoes. Let the sauce thicken for 2-3 minutes.

  • Combine: Add cooked pasta and chicken back into the skillet. Toss to coat with the sauce, and heat for 2-3 minutes.

  • Serve: Garnish with basil leaves before serving.

Notes

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days.

Reheating: Reheat in a skillet with a bit of cream or broth if the sauce has thickened too much.

Variations: Customize with mushrooms, tofu, or shrimp, or add extra vegetables like spinach or bell peppers.
