Chicken roll-ups are tender chicken breasts stuffed with mozzarella and spinach, then baked until juicy and cheesy. They’re comforting, versatile, and elegant enough to serve for guests while being simple enough for weeknight dinners.

Ingredients

4 chicken breasts

2 buffalo mozzarella balls (or mozzarella of choice)

1 cup frozen spinach, thawed and drained

Seasonings of choice (salt, pepper, paprika, garlic powder, Italian seasoning, etc.)

Optional: gluten-free breadcrumbs, sun-dried tomatoes, roasted red peppers, or sauce for topping

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Thaw and drain spinach, squeezing out excess moisture.
  3. Slice mozzarella into thin pieces.
  4. Butterfly each chicken breast by slicing lengthwise without cutting through, then pound to even thickness.
  5. Place spinach and mozzarella inside each chicken breast. Roll up tightly and secure with toothpicks if needed.
  6. Season outside with preferred spices or herbs.
  7. Arrange roll-ups in baking dish and bake for 25–30 minutes until chicken is cooked through and cheese melted.
  8. Let rest a few minutes before slicing and serving.

Notes

Use fresh spinach by sautéing until wilted and draining excess liquid.

Substitute mozzarella with feta, provolone, or cheddar.

For a crispy finish, coat with gluten-free breadcrumbs before baking.

Add sun-dried tomatoes, roasted peppers, or mushrooms for variation.

Top with marinara, cream sauce, or pesto for extra flavor.
