These Chicken Verde Wonton Tacos are a crispy, flavorful twist on traditional tacos. Filled with shredded chicken, tangy salsa verde, and a blend of spices, these bite-sized tacos are topped with melted cheese, fresh green onions, and optional avocado. Perfect for appetizers, snacks, or a fun weeknight dinner!

 

Ingredients

4 ounces cooked, shredded boneless skinless chicken breasts

1/4 cup salsa verde

1 tablespoon light sour cream

1/4 teaspoon chili powder

1/4 teaspoon garlic powder

1/4 teaspoon cumin

2 tablespoons sliced green onions

1/4 cup reduced fat Mexican blend cheese

8 wonton wrappers

(Optional) 2 tablespoons diced avocados and cilantro for topping

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).

  • Prepare the Chicken Filling: In a small bowl, mix together shredded chicken, salsa verde, sour cream, chili powder, garlic powder, cumin, and green onions. Stir until the chicken is well-coated.

  • Prepare the Wonton Wrappers: Lightly spray a muffin tin with cooking spray. Gently press the wonton wrappers into the muffin tin to form taco shapes.

  • Bake the Wonton Wrappers: Place the muffin tin in the oven and bake for 8-10 minutes, or until the wonton wrappers are golden and crispy.

  • Assemble the Tacos: Remove the wonton wrappers from the oven and carefully spoon the chicken mixture into each shell. Top with a sprinkle of cheese and return to the oven for 2-3 minutes to melt the cheese.

  • Serve: Remove from the oven and garnish with diced avocado (optional) and fresh cilantro. Serve immediately!

Notes

Use store-bought rotisserie chicken for a quick and easy option.

To make these tacos spicier, add a chopped jalapeño or use a spicier salsa verde.

For a vegetarian version, replace chicken with black beans, roasted vegetables, or tofu.
