Chipotle Mayo (Mexican Secret Sauce)

A smoky, tangy, and slightly spicy chipotle mayo that takes just 5 minutes to make. Perfect as a dip, spread, or drizzle for tacos, burgers, sandwiches, fries, and roasted veggies.

Ingredients

1/2 cup mayonnaise (or sour cream, vegan mayo, or blended silken tofu)

1 tablespoon water

12 teaspoons lime juice (to taste)

Salt and black pepper, to taste

1/2 teaspoon chili powder

1 teaspoon smoked paprika

1/81/4 teaspoon ground chipotle powder or 1 chipotle pepper from a can (blended) or 1–3 teaspoons adobo sauce from the can

Instructions

  1. Place mayonnaise (or alternative base) in a small mixing bowl.
  2. Add water and lime juice; stir until smooth.
  3. Mix in chili powder, smoked paprika, chipotle powder (or chipotle/adobo sauce), plus salt and pepper.
  4. Taste and adjust seasonings, adding more lime or chipotle to taste.
  5. Refrigerate for at least 15 minutes to let flavors meld before serving.

Notes

For a tangier version, use sour cream instead of mayo.

Use silken tofu for a lighter, vegan, oil-free option.

Add fresh cilantro for an herbal twist.

Double the smoked paprika for extra smokiness.

Adjust chipotle or adobo sauce for more or less heat.
