Chocolate chia pudding is a creamy, chocolatey treat packed with healthy fats, fiber, and antioxidants. It’s a nutritious, customizable dessert or snack that’s easy to make and perfect for any time of the day.

Ingredients

2 Tbsp chia seeds

½ cup milk

2 tsp maple syrup or honey

1 Tbsp unsweetened cocoa powder

½ tsp vanilla extract

Instructions

  1. In a small bowl, combine the chia seeds, milk, maple syrup (or honey), cocoa powder, and vanilla extract.
  2. Stir well to ensure the cocoa powder is fully incorporated into the liquid and the chia seeds are evenly distributed.
  3. Cover the bowl and place it in the refrigerator for at least 2 hours or overnight. The chia seeds will absorb the liquid and thicken, creating a pudding-like consistency.
  4. Once the pudding has set, give it a good stir. You can add extra sweetener or a splash of milk if you’d like a smoother texture.
  5. Serve cold, and if desired, top with fresh berries, nuts, or a dollop of whipped cream for added flavor and texture.

Notes

Store leftover pudding in an airtight container in the refrigerator for up to 3-4 days.

If the pudding thickens too much, stir in a little extra milk to reach your desired consistency.

This pudding is naturally vegan if you use maple syrup as your sweetener and plant-based milk.

For a richer flavor, add peanut butter or a pinch of cinnamon to the mixture.
