  1. Prep the strawberries: Line a baking sheet with parchment paper. Wash the strawberries and pat them dry thoroughly with paper towels. Ensure strawberries are completely dry and at room temperature to prevent chocolate from slipping off due to condensation.
  2. Melt the chocolate: Using a double boiler on the stove, melt the chocolate chips while stirring until silky smooth. Alternatively, melt them in the microwave in 20-second intervals, stirring between each, until completely melted and smooth.
  3. Dip the strawberries: Hold each strawberry by the leaves and dip it slowly into the melted chocolate, covering almost up to the top. Rotate the strawberry to coat all sides evenly. Lift and gently shake off excess chocolate. To prevent pooling, scrape off extra chocolate from the underside against the bowl’s edge.
  4. Let the chocolate harden: Place the dipped strawberries carefully on the parchment-lined baking sheet. Let them air dry at room temperature for at least 20 to 30 minutes until the chocolate hardens. For firmer chocolate, chill the strawberries in the refrigerator after drying.
