Churro French Toast is a decadent twist on traditional French toast, featuring a cinnamon-sugar coating and a rich, fluffy interior. It combines the best elements of churros and French toast for a delightful breakfast or brunch.

Ingredients

8 thick slices of day-old brioche or challah bread

4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon salt

1 cup granulated sugar

2 teaspoons ground cinnamon (for coating)

Butter, for frying

Instructions

  1. Prepare the egg mixture: In a large bowl, whisk together the eggs, whole milk, vanilla extract, ground cinnamon, and salt until fully combined.
  2. Coat the bread: In a separate shallow bowl, mix the granulated sugar and ground cinnamon for the coating. Set aside.
  3. Soak the bread: Dip each slice of brioche or challah bread into the egg mixture, ensuring each side is evenly coated. Let any excess mixture drip off before frying.
  4. Fry the French toast: Heat a skillet or griddle over medium heat and add a small amount of butter. Once the butter is melted and bubbling, add the soaked bread slices to the pan. Fry each slice for 2-3 minutes per side, or until golden brown and crispy.
  5. Coat with cinnamon sugar: Immediately after frying, coat each slice of French toast in the cinnamon-sugar mixture, ensuring both sides are well covered.
  6. Serve: Serve the Churro French Toast warm, topped with syrup, whipped cream, fresh berries, or any of your favorite toppings.
