Classic Rose Falooda is a vibrant, refreshing Indian dessert drink made with falooda sev, sabja seeds, rose syrup, milk, vanilla ice cream, and crunchy nuts. This layered dessert is perfect for summer days, festivals, or as a fun, indulgent treat. With its mix of textures and flavors, it’s sure to be a crowd-pleaser.

Ingredients

1 cup (50g) falooda sev

2 cups (480ml) milk (full fat or low fat)

2 teaspoons sabja seeds (basil seeds)

2 tablespoons sugar

¼ cup (60ml) rooh afza (rose syrup)

2 scoops vanilla ice cream

68 cashews, chopped

1012 pistachios, chopped

1 packet strawberry jelly

Instructions

  • Prepare the Jelly: Prepare the strawberry jelly according to the packet instructions. Let it set in the refrigerator for a few hours, then cut into cubes.

  • Soak Sabja Seeds: Soak sabja seeds in water for 15-20 minutes until they swell. Drain and set aside.

  • Cook the Falooda Sev: Boil water, add falooda sev, and cook as per the package instructions. Drain and rinse with cold water. Set aside.

  • Prepare Milk Mixture: Boil the milk, add sugar, and stir until dissolved. Let it cool to room temperature or chill it for a creamier texture.

  • Assemble the Falooda: In glasses, layer falooda sev, sabja seeds, and strawberry jelly. Pour the cooled milk mixture until the glass is three-quarters full.

  • Add Rose Syrup: Drizzle rose syrup over the milk mixture for color and flavor.

  • Top with Ice Cream: Add a scoop of vanilla ice cream on top.

  • Garnish: Garnish with chopped cashews, pistachios, and more strawberry jelly.

  • Serve: Serve immediately while the ice cream is still cold and the layers are intact.

Notes

Storage: Rose Falooda is best served immediately for optimal texture. Prepare milk and ice cream ahead of time, but assemble right before serving.

Variations: Try different flavored syrups, use a different jelly, or make it vegan with plant-based milk and ice cream.
