Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Marinade

  • 1 cup canned coconut milk (full fat)
  • 1/4 cup lime juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

Cooking

  • 2 tablespoons olive oil

Garnish

  • Zest of 1 lime
  • Fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the coconut milk, freshly squeezed lime juice, minced garlic, soy sauce, honey, ground cumin, ground coriander, salt, and pepper until fully combined to create a flavorful marinade.
  2. Marinate the Chicken: Place the chicken breasts in a shallow dish or a resealable plastic bag, then pour the marinade over the chicken ensuring it is well-coated. Cover and refrigerate for at least 1 hour, ideally 2-3 hours, to allow the flavors to deeply penetrate the chicken.
  3. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering. This will create a nice sear on the chicken breasts.
  4. Cook the Chicken: Remove the chicken breasts from the marinade, letting excess drip off. Carefully place them in the hot skillet. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through with an internal temperature of 165°F (74°C).
  5. Let it Rest: Once cooked, transfer the chicken to a plate and let it rest for 5 minutes. This helps retain the juices and keeps the chicken moist.
  6. Garnish and Serve: Sprinkle the cooked chicken with fresh lime zest and chopped cilantro. Serve with lime wedges on the side for an extra burst of citrus flavor. Enjoy alongside your favorite sides.

Notes

  • Marinating overnight enhances the flavor but 1 hour is sufficient if short on time.
  • Use full-fat coconut milk for a richer, creamier sauce.
  • The chicken can be served over rice, quinoa, or a fresh salad for a complete meal.
  • Adjust the honey according to preferred sweetness levels.
  • For a spicier kick, add a pinch of cayenne pepper or chopped fresh chili to the marinade.
