A creamy, finely shredded chicken salad inspired by Chicken Salad Chick’s Classic Carol, featuring tender chicken, crisp celery, and simple seasonings for a fresh, timeless flavor.

Ingredients

1 pound chicken tenders or chicken breast

8 cups chicken broth (for poaching)

1/2 cup mayonnaise

1 stalk celery, finely diced

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp celery salt

1/8 tsp ground black pepper

1/8 tsp salt

Instructions

  1. In a large pot, bring chicken broth to a simmer. Add chicken tenders or breast and poach until fully cooked, about 15–20 minutes.
  2. Remove chicken and let cool slightly. Shred finely using two forks, a hand mixer on low, or a food processor for a fine texture.
  3. In a large bowl, combine shredded chicken, diced celery, mayonnaise, garlic powder, onion powder, celery salt, black pepper, and salt. Mix until evenly blended.
  4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Chicken tenders give a closer texture to the original restaurant version.

For convenience, rotisserie chicken can be substituted, though texture may vary.

Finely shredding the chicken creates the classic, uniform consistency.

Serve chilled on bread, crackers, or lettuce wraps.
