Corn Ribs made in the air fryer are a fun, crispy, and savory twist on traditional corn on the cob, topped with a creamy, spicy mixture of cream cheese, mayonnaise, and seasonings.

Ingredients

4 ears of corn, husked and cut into 16 ribs

1 cup (250g) cream cheese

¼ cup (14g) fresh parsley, finely chopped

½ tablespoon garlic powder

1 cup (250g) mayonnaise

½ tablespoon Tabasco sauce

½ tablespoon ground chili

1 lime, for serving

2 jalapeños, optional, for serving

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Husk the corn and cut each ear into 4 pieces, creating 16 ribs.
  3. Place the corn ribs in the air fryer basket in a single layer. Cook in batches if needed.
  4. Air fry the corn at 400°F for 12-15 minutes, flipping halfway through, until golden brown and crispy.
  5. While the corn is cooking, prepare the creamy topping by combining cream cheese, mayonnaise, garlic powder, Tabasco sauce, and ground chili in a mixing bowl. Stir until smooth.
  6. Once the corn is done, transfer it to a serving platter.
  7. Spoon the creamy topping generously over the hot corn ribs.
  8. Garnish with fresh parsley, a squeeze of lime juice, and sliced jalapeños (if using).
  9. Serve immediately and enjoy!

Notes

This recipe can be customized with different herbs, cheeses, or additional toppings like crumbled grilled chicken.

For a milder version, reduce the heat by omitting Tabasco sauce or using a less spicy pepper.

Vegan options are available by swapping vegan mayonnaise and cream cheese.

To make ahead, prepare the creamy topping 1 day in advance and store it in the fridge until ready to serve.
