A hearty and protein-packed beef bowl featuring roasted sweet potato, seasoned ground beef, creamy cottage cheese, and fresh avocado, perfect for a quick and wholesome meal.

Ingredients

1/2 lb lean ground beef

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 medium sweet potato, peeled and diced

1 teaspoon olive oil

1 ripe avocado, diced

1 cup low-fat cottage cheese

Hot sauce (optional, for drizzling)

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced sweet potato with olive oil, salt, and pepper, then roast on a baking sheet for 20–25 minutes until golden and tender.
  2. Meanwhile, heat a skillet over medium heat and cook the ground beef with garlic powder, onion powder, salt, and pepper until browned and fully cooked. Drain excess fat if needed.
  3. Assemble the bowl by layering roasted sweet potato, seasoned ground beef, cottage cheese, and diced avocado.
  4. Drizzle hot sauce on top if desired and serve immediately.
