Crabby Shrimp Garlic Bread Bombs

A delicious twist on garlic bread, filled with shrimp, cream cheese, mozzarella, and a touch of garlic, all wrapped in a crispy buttery crust.

Ingredients

For the bread base:

1 loaf crusty Italian bread

60 ml unsalted butter, melted

For the seafood filling:

450 g fresh shrimp, peeled and deveined

225 g cream cheese, softened

60 g mozzarella cheese, shredded

For flavor boosters:

15 g fresh parsley, finely chopped

4 cloves garlic, minced

Salt, to taste

Black pepper, to taste

Red pepper flakes, as desired

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the loaf of Italian bread into 1 to 1.5-inch thick slices. Hollow out each slice of bread to create a well for the filling. Place the bread slices on a baking sheet.
  2. In a medium skillet, heat a small amount of oil over medium heat. Add the shrimp and cook for 2-3 minutes, until pink and cooked through. Remove from heat, set aside to cool slightly, then chop the shrimp into small pieces.
  3. In a mixing bowl, combine the chopped shrimp, softened cream cheese, shredded mozzarella cheese, garlic, fresh parsley, salt, black pepper, and red pepper flakes. Stir until well combined.
  4. Spoon the seafood mixture into each hollowed-out slice of bread, filling each well generously with the shrimp mixture.
  5. Brush the edges of the bread with melted butter to enhance the golden, crispy crust.
  6. Place the filled bread slices in the oven and bake for 12-15 minutes, or until the bread is crispy and the filling is warm and bubbly.
  7. Remove from the oven, allow to cool for a minute, then serve immediately. Enjoy!

Notes

Leftover Crabby Shrimp Garlic Bread Bombs can be stored in an airtight container in the refrigerator for up to 2 days.

Reheat in the oven at 350°F (175°C) for 5-7 minutes for crispy results. Alternatively, microwave them, though the crust will lose some crispiness.

You can prepare the shrimp and cheese filling 24 hours in advance and store it in the fridge for easy assembly when ready to bake.

For a true “crabby” twist, mix in lump crab meat along with the shrimp.

Use light cream cheese for a lower-fat option, though the filling may be slightly less rich.

If you prefer smaller portions, try using dinner rolls or French baguette slices instead of a large loaf.

Freezing: Assemble the bombs but do not bake. Freeze them on a baking sheet for about 1 hour before transferring to a freezer-safe container. Bake from frozen, adding 5-7 minutes to the baking time.
