These Cranberry and Brie Filo Crackers make a delightful and elegant appetizer combining the flaky crispness of filo pastry with creamy brie and tangy cranberry sauce, topped with crunchy almonds and nutty black sesame seeds for added texture and flavor.

Ingredients

Pastry

  • 6 sheets frozen filo pastry, thawed
  • 50 g butter, melted

Filling and Toppings

  • 250 g brie, cut into long slices
  • 275 g cranberry sauce
  • ¼ cup flaked almonds
  • 1 tablespoon black sesame seeds

Instructions

  1. Preheat the oven: Set your oven to 180°C (350°F) and prepare a baking tray by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Prepare the filo pastry: Carefully lay one sheet of thawed filo pastry on a clean surface and brush it evenly with melted butter. Repeat this layering and buttering process until all 6 sheets are stacked, giving a rich and crispy base.
  3. Cut and assemble: Using a sharp knife or a pizza cutter, cut the stacked filo pastry into squares or rectangles of desired size for crackers. Place a slice of brie on each square, then add a spoonful of cranberry sauce on top.
  4. Add the toppings: Sprinkle flaked almonds and black sesame seeds evenly over each cracker for added crunch and flavor.
  5. Bake the crackers: Transfer the assembled crackers carefully onto the prepared baking tray, ensuring they have some space between them. Bake in the preheated oven for approximately 12-15 minutes or until the filo is golden brown and crisp, and the brie is melted.
  6. Cool and serve: Remove the crackers from the oven and let them cool slightly on a wire rack for a few minutes before serving. Enjoy them warm or at room temperature as a sophisticated appetizer or party snack.

Notes

  • Handle filo pastry gently as it is very delicate and can tear easily.
  • You can substitute brie with camembert or another soft cheese if preferred.
  • For added flavor, sprinkle a pinch of freshly ground black pepper on top before baking.
  • Serve these crackers with additional cranberry sauce or a light honey drizzle if desired.
  • Make sure to thaw filo pastry completely before use to avoid breakage.
