This Creamy Carrot Cake Smoothie combines the natural sweetness of ripe banana and carrot with warm spices like cinnamon, ginger, and nutmeg, creating a deliciously smooth and nutritious treat reminiscent of classic carrot cake flavors, perfect for a quick breakfast or snack.

Ingredients

Main Ingredients

  • 1 large ripe frozen banana (approximately 1 ¼ cups when sliced)
  • 1 small carrot, chopped (about ½ cup)
  • 1 pitted date (optional; if dry, soak in warm water for 10-15 minutes and drain)
  • ¼ tsp ground cinnamon
  • ½ tsp vanilla extract or ⅛ tsp vanilla powder
  • 1 tsp fresh minced or grated ginger or ¼ tsp ground ginger
  • 1 healthy pinch ground nutmeg
  • ½1 cup dairy-free milk (use less for thicker smoothie, more for thinner; recommended cashew, coconut, or almond milk)
  • 1 scoop plain or vanilla protein powder (optional; if using sweetened protein powder, omit the date)

For Serving (Optional)

  • Shredded carrots
  • Shredded coconut
  • 1 Tbsp chopped walnuts or hemp seeds

Instructions

  1. Prepare Ingredients: Gather all the ingredients. If using a dry date, soak it in warm water for 10-15 minutes to soften, then drain. Chop the small carrot and ensure the banana is frozen and ripe.
  2. Add to Blender: Place the frozen banana, chopped carrot, pitted date (if using), ground cinnamon, vanilla extract or powder, fresh or ground ginger, and a pinch of ground nutmeg into the blender.
  3. Add Liquid and Protein Powder: Pour in ½ cup of your choice of dairy-free milk to start. Add the scoop of protein powder if desired. Remember, if your protein powder is sweetened, skip the date for balanced sweetness.
  4. Blend Smooth: Blend all ingredients until smooth and creamy. Check the consistency and add more dairy-free milk as needed to reach your preferred thickness, blending again briefly.
  5. Serve and Garnish: Pour the smoothie into a glass. Optionally, garnish with shredded carrots, shredded coconut, and a tablespoon of chopped walnuts or hemp seeds for an added texture and flavor boost.

Notes

  • For a thicker smoothie, reduce the amount of dairy-free milk used.
  • The smoothie can be made without protein powder if preferred; adjust sweetness by adding the date accordingly.
  • Using fresh ginger gives a brighter flavor, while ground ginger provides a subtler warmth.
  • Frozen banana is key to achieving a creamy texture without adding ice.
  • Customize the spices to your taste, but cinnamon, nutmeg, and ginger combine to mimic carrot cake flavors perfectly.
