This Creamy Coconut Lime Mojito with a Thai twist is a refreshing tropical cocktail that combines the zesty brightness of lime and kaffir lime leaves with the smooth sweetness of cream of coconut and coconut rum. Enhanced by a simple syrup infused with kaffir lime leaves and topped with bubbly soda, this unique mojito offers an exotic flavor profile perfect for summer gatherings or relaxing evenings.

Ingredients

Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 4 kaffir lime leaves

Cocktail

  • 1 shot white coconut rum
  • 2 tablespoons kaffir lime leaves simple syrup
  • 1/4 cup cream of coconut
  • 2 tablespoons fresh lime juice
  • 1/3 cup soda, tonic, or bubbly water (adjust to taste)
  • Ice cubes

Garnish

  • Mint leaves
  • Optional: Thai basil, lemon or lime wedges, rosemary, ginger, tropical edible flowers, or fruits

Instructions

  1. Prepare the simple syrup: In a small saucepan, combine sugar, water, and 4 kaffir lime leaves. Heat over medium heat, whisking frequently, until the sugar dissolves and the mixture reaches a gentle boil. Remove from heat and allow the syrup to cool completely to infuse kaffir lime flavor.
  2. Muddle herbs: In a tall cocktail glass, muddle 3-4 fresh mint leaves along with one large kaffir lime leaf to release their aromas and essential oils.
  3. Mix cocktail base: Add ice cubes into the glass, then pour in the white coconut rum, 2 tablespoons of the cooled kaffir lime simple syrup, and fresh lime juice. Stir vigorously with a stir stick to combine all flavors well.
  4. Add creaminess: Pour in the cream of coconut and stir thoroughly until the drink becomes foamy and well blended. Taste and adjust by adding a little more rum if desired.
  5. Top with soda: Gently top off the drink with soda, tonic, or bubbly water according to your preference and stir lightly one final time.
  6. Garnish and serve: Garnish with fresh mint leaves and your choice of Thai basil, lemon or lime wedges, rosemary, ginger, or tropical edible flowers or fruits for an exotic presentation. Enjoy immediately!

Notes

  • Kaffir lime leaves add a unique citrus aroma; if unavailable, substitute with lime zest, though the flavor will be less complex.
  • Adjust the amount of soda or tonic water based on how light or strong you prefer your cocktail.
  • The cream of coconut adds sweetness and creaminess; avoid using coconut milk as it will alter the texture and sweetness.
  • Chill your cocktail glass beforehand for a cooler, refreshing drink.
  • This mojito is best served fresh to enjoy its effervescence and vibrant flavors.
