Ingredients

Sausage and Peppers

  • 1 Pound Italian Sausage Links (1 package)
  • 1 Small Green Pepper, sliced
  • 1 Small Red Pepper, sliced
  • 1 Small Yellow Onion, sliced thin
  • 2 Tablespoons Cooking White Wine
  • 1 Can Fire Roasted Diced Tomatoes (about 14.5 ounces)
  • 6 Ounces Tomato Paste
  • 8 Ounces Tomato Sauce
  • 12 Ounces Water
  • ½ teaspoon Italian Seasoning
  • 1 teaspoon Sugar
  • ½ teaspoon Salt
  • ⅓ Cup Heavy Cream
  • Salt and Pepper, to taste
  • Parmesan Cheese, for finishing

Mashed Potatoes

  • Potatoes (quantity not specified; estimated 2 pounds for 4 servings)
  • Salt, to taste
  • Butter and/or milk (optional, not specified but commonly used)

Instructions

  1. Boil Potatoes: Begin by boiling the potatoes in salted water so they will be ready to mash by the time your sausage and peppers finish cooking.
  2. Heat Oil: Heat a tablespoon of olive oil in a large skillet over medium-high heat to prepare for browning the sausages.
  3. Brown Sausages: Brown the Italian sausages on all sides until they are almost cooked through. Remove from the pan and slice into ¼ inch pieces. They will finish cooking in the sauce later.
  4. Sauté Vegetables: Add another teaspoon of olive oil to the pan and sauté the sliced green pepper, red pepper, and onion until slightly softened, about five minutes.
  5. Deglaze Pan: Return the sliced sausage pieces to the pan and pour in the white wine to deglaze, scraping up any browned bits from the bottom.
  6. Add Sauce Ingredients: Stir in the fire roasted diced tomatoes, tomato paste, tomato sauce, water, Italian seasoning, sugar, salt, and heavy cream to create a creamy tomato sauce.
  7. Combine Sauce: Mix everything thoroughly to combine all the flavors.
  8. Simmer Sauce: Bring the sauce to a boil, then reduce heat to a simmer and cook for ten minutes, allowing the sausage to finish cooking and flavors to meld.
  9. Mash Potatoes: While the sauce simmers, drain the boiled potatoes and mash them until smooth, seasoning with salt and pepper. Optionally, you can add butter and milk for creaminess.
  10. Season and Garnish: Season the sausage and peppers with additional salt and pepper as needed, then garnish with grated Parmesan cheese for a savory finish.
  11. Serve: Spoon the creamy sausage and peppers mixture over the mashed potatoes and serve immediately.

Notes

  • Use medium to large potatoes like Yukon Gold or Russet for the best mashed potatoes texture.
  • To make the mashed potatoes creamier, add butter, milk, or cream while mashing.
  • If preferred, turkey or chicken sausage can be substituted for a leaner option.
  • The sauce can be made spicier by using spicy Italian sausage or adding red pepper flakes.
  • Leftovers store well and can be reheated on stovetop or microwave.
