This creamy spinach and eggs recipe is a quick and nutritious meal perfect for breakfast or brunch. Fresh baby spinach is sautéed with green onions and seasoned with salt and pepper, then combined with creamy Greek yogurt for a rich texture. Eggs are gently cooked in the mixture to create a velvety, protein-packed dish that pairs beautifully with crusty bread.

Ingredients

Vegetables and Greens

  • 3-4 green onions (thinly sliced, both white and green parts)
  • 5 oz. baby spinach (about 4 cups)

Dairy and Eggs

  • ½ cup Greek yogurt (I prefer Fage 5%)
  • 4 eggs

Others

  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon kosher salt (plus more if needed)
  • ¼ teaspoon black pepper (plus more if needed)
  • Crusty bread (for serving, optional)

Instructions

  1. Heat the oil: In a large skillet over medium heat, warm 1 tablespoon of extra-virgin olive oil until it shimmers.
  2. Sauté the green onions: Add the thinly sliced green onions (including white and green parts) to the skillet. Cook for about 2 minutes until they soften and become fragrant.
  3. Add spinach and season: Toss in 5 ounces of baby spinach and sauté until wilted, about 2-3 minutes. Season with ½ teaspoon kosher salt and ¼ teaspoon black pepper, adjusting seasoning to taste.
  4. Incorporate Greek yogurt: Lower the heat and stir in ½ cup of Greek yogurt, mixing well to combine with the spinach mixture. Cook gently until heated through but do not boil.
  5. Cook the eggs: Make four small wells in the spinach and yogurt mixture. Crack one egg into each well. Cover the skillet with a lid and cook over low heat until the egg whites are set but yolks remain runny, about 5-7 minutes.
  6. Adjust seasoning and serve: Taste and add more salt or pepper if needed. Serve immediately paired with crusty bread if desired for dipping into the creamy spinach and eggs.

Notes

  • Use full-fat Greek yogurt for the creamiest texture and best flavor.
  • Cooking the eggs covered helps them steam gently for perfect doneness.
  • Crusty bread is optional but recommended for a complete meal.
  • This dish can be easily doubled or halved depending on servings needed.
