Ingredients

Vegetables

  • 3.5oz / 100g frozen spinach OR 2 cups fresh baby spinach
  • ¼ white onion or 2 scallions

  • 2.5oz / 70g feta cheese

  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare the spinach: If using frozen spinach, thaw and drain excess water. If using fresh baby spinach, wash thoroughly and chop roughly. Set aside.
  2. Chop the onions: Finely dice the white onion or slice the scallions thinly for a milder flavor.
  3. Cook the onions: Heat the olive oil in a skillet or frying pan over medium heat. Add the chopped onions or scallions and sauté until softened and translucent, about 3-4 minutes.
  4. Add the spinach: Add the prepared spinach to the pan with the onions and cook for another 2-3 minutes until heated through and any moisture has evaporated.
  5. Prepare the eggs: In a bowl, crack the eggs and beat them lightly with a pinch of salt and black pepper.
  6. Cook the eggs with spinach: Pour the beaten eggs evenly over the spinach and onion mixture in the pan. Let it cook undisturbed for 1-2 minutes, then gently stir or fold the mixture to scramble the eggs with the vegetables, cooking until eggs are just set but still moist.
  7. Add feta cheese: Crumble the feta cheese over the eggs and spinach mixture and gently fold it in, allowing it to warm and slightly melt.
  8. Finish and serve: Adjust seasoning with additional salt and pepper if desired. Serve immediately as a nutritious breakfast or light meal.
