Ingredients

Chicken

Sauce

  • 2 tbsp butter
  • 4 cloves garlic, smashed
  • 1 cup half and half
  • 1/4 cup chicken broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups spinach

Instructions

  1. Prepare the Chicken: Season the chicken cutlets on both sides with salt and black pepper according to your taste. Ensure they are evenly coated for balanced flavor.
  2. Cook the Chicken: Heat vegetable oil in a large skillet over medium heat. Add the chicken cutlets and cook each side until golden brown and cooked through, approximately 3-4 minutes per side depending on thickness. Remove the chicken from the skillet and set aside.
  3. Make the Roux: In the same skillet, reduce heat to medium-low and melt butter. Add the smashed garlic cloves and sauté briefly until aromatic, about 1 minute. Sprinkle the all-purpose flour over the butter and garlic, stirring constantly to form a roux. Cook for about 2 minutes without browning to remove the raw flour taste.
  4. Create the Cream Sauce: Gradually whisk in the half and half along with chicken broth into the roux. Continue stirring to prevent lumps. Season the sauce with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Allow the sauce to simmer and thicken for 3-5 minutes, stirring occasionally.
  5. Add Spinach: Stir in the fresh spinach leaves into the cream sauce. Cook until the spinach has wilted and incorporated into the sauce, about 2 minutes.
