Instructions

  1. Preheat oven and prepare baking dish: Preheat the oven to 350°F (175°C) and position an oven rack in the upper third of the oven. Lightly spray an 8×11 inch baking dish with cooking spray and set it aside for later use.
  2. Drain spinach: Place the thawed frozen spinach in a colander and use a clean kitchen towel or your hands to wring out any excess moisture thoroughly to prevent the dip from becoming watery.
  3. Mix the dip ingredients: In a large mixing bowl, combine Greek yogurt and softened cream cheese until smooth. Add the drained spinach, 1 cup of shredded mozzarella cheese, grated Parmesan cheese, garlic powder, onion powder, kosher salt, and freshly ground black pepper. Mix everything until evenly combined.
  4. Assemble the dip: Transfer the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining ¼ cup of mozzarella cheese evenly on top.
  5. Bake and broil the dip: Bake in the preheated oven until the cheese melts and the dip is hot, approximately 5-10 minutes. Then switch the oven setting to high broil and place the dip on the top rack. Broil for about 2 minutes or until the cheese is golden brown and bubbling. Serve immediately with toasted French bread, crackers, or pita chips.
