12 oz potato gnocchi
10–12 large shrimp, peeled & deveined
1 tbsp olive oil
2 tbsp butter
3 garlic cloves, minced
½ cup sun-dried tomatoes, chopped
1 cup baby spinach
¾ cup heavy cream
⅓ cup grated parmesan cheese
Salt & black pepper to taste
Fresh basil (for garnish)
Cook the Gnocchi:
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually 2-3 minutes or until they float to the top. Drain and set aside.
Cook the Shrimp:
In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.

Combine the Ingredients:

Stir in the grated parmesan cheese and season with salt and black pepper to taste.
Finish and Serve:
Add the cooked shrimp back into the skillet and toss gently to combine with the gnocchi and sauce.
