A fresh, crunchy salad made with sweet apples, crisp kohlrabi, fragrant tarragon, sunflower seeds, and a light lemon dressing. Simple yet elegant, this salad makes a refreshing side or light meal.

Ingredients

2 small kohlrabi (about 1 pound), peeled and cut into ¼″ matchsticks

1 large Honeycrisp apple (about ½ pound), cored and cut into ¼″ matchsticks

⅓ cup grated gouda cheese (optional)

¼ cup fresh tarragon leaves

3 tablespoons toasted sunflower seeds

Lemon zest, to taste

1 to 2 tablespoons olive oil, to taste

1 to 2 tablespoons lemon juice, to taste

Flaky sea salt and freshly ground black pepper, to taste

Instructions

  1. Peel kohlrabi and cut into thin matchsticks. Core and slice apple into matchsticks.
  2. Place kohlrabi and apple in a large mixing bowl.
  3. Add grated gouda (if using), tarragon leaves, sunflower seeds, and lemon zest.
  4. Drizzle with olive oil and lemon juice. Toss gently to coat.
  5. Season with flaky sea salt and black pepper to taste.
  6. Serve immediately for best texture and flavor.

Notes

Swap tarragon with parsley, mint, or dill for a different flavor.

Use feta, Parmesan, or goat cheese instead of gouda.

Replace sunflower seeds with pumpkin seeds, walnuts, or almonds.

Add carrots or radishes for extra crunch and color.

Serve over arugula or mixed greens for a heartier salad.
