Crispy Baked Cauliflower Bites are a delicious and healthy appetizer option that features tender cauliflower florets coated in a spiced batter and baked to golden perfection. This recipe uses whole wheat flour and a blend of savory seasonings to create a crunchy, flavorful bite without deep frying, making it a guilt-free treat perfect for snacking or serving at parties.

Ingredients

Cauliflower and Batter

  • 1 head of cauliflower
  • 2 tablespoons extra virgin olive oil
  • 1 cup whole wheat flour (or substitute all purpose flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1 cup cold carbonated water

Instructions

  1. Prepare the Cauliflower: Wash and cut the cauliflower into bite-sized florets, ensuring they are uniform in size for even cooking.
  2. Make the Batter: In a mixing bowl, combine the whole wheat flour, baking powder, salt, garlic powder, onion powder, and smoked paprika. Slowly whisk in cold carbonated water until the batter is smooth and has a slightly thick consistency.
  3. Coat the Cauliflower: Dip each cauliflower floret into the batter, making sure it is fully coated. Shake off excess batter to avoid clumping.
  4. Prepare for Baking: Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly brush or spray it with olive oil to prevent sticking.
  5. Bake the Cauliflower: Place the battered florets on the prepared baking sheet in a single layer, making sure they don’t touch. Drizzle or brush the florets lightly with the remaining olive oil to help them crisp up.
  6. Crisp and Cook: Bake in the preheated oven for about 20-25 minutes, flipping the cauliflower halfway through the baking time, until they turn golden brown and crispy on the outside and tender on the inside.
  7. Serve: Remove from the oven and let the cauliflower bites cool slightly before serving as an appetizer or snack.

Notes

  • For extra crispiness, you can broil the cauliflower bites for the last 2-3 minutes but watch closely to prevent burning.
  • Substitute the whole wheat flour with all-purpose flour if preferred for a lighter texture.
  • Cold carbonated water helps make the batter lighter and crispier.
  • Serve with your favorite dipping sauces such as ranch, garlic aioli, or spicy sriracha mayo.
  • Ensure cauliflower florets are evenly sized for uniform cooking.
