A fresh and elegant spinach salad topped with roasted strawberries, crispy brie bites, and slivered almonds, finished with a tangy balsamic dressing. Perfect as a side dish or a light main course.

Ingredients

4 ounces baby spinach, washed

2 cups roasted strawberries

2/3 cup extra-virgin olive oil

1/3 cup balsamic vinegar

2 tbsp pure maple syrup (optional)

1 clove garlic, smashed

1/2 tsp kosher salt

1/2 tsp freshly ground black pepper

1/4 cup slivered almonds

Instructions

  1. Preheat oven to 375°F (190°C). Roast strawberries on a baking sheet for about 20 minutes until soft and caramelized.
  2. Whisk together olive oil, balsamic vinegar, maple syrup (if using), garlic, salt, and pepper to make the dressing.
  3. Arrange spinach on a serving platter or individual plates.
  4. Allow strawberries to cool slightly, then add to the salad.
  5. Prepare crispy brie bites according to package instructions, baking until golden and crisp.
  6. Top salad with roasted strawberries, crispy brie bites, and slivered almonds.
  7. Drizzle dressing over salad just before serving.

Notes

Best enjoyed fresh; store leftover dressing separately for up to 5 days.
