  3. Add Cream of Tartar and Vanilla: Add the cream of tartar and vanilla extract to the egg whites. Continue beating until soft peaks form, which means when you lift the beaters the peaks gently hold shape but curl over at the tips.
  4. Dissolve Coffee Granules: Dissolve the instant coffee granules in a teaspoon of warm water to ensure even flavor distribution. Gently fold this coffee mixture into the beaten egg whites.
  5. Add Sugar Gradually: Slowly add the granulated sugar, one tablespoon at a time, while beating continuously at high speed. Beat until stiff, glossy peaks form and sugar is fully dissolved, indicating the meringue is stable.
  6. Shape Meringues: Using a spoon or piping bag, place small dollops or shapes of meringue onto the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake: Bake the meringues in the preheated oven for about 1 hour and 15 minutes to 1 hour and 30 minutes. They should be dry to the touch and easily lift off the parchment paper.
