Crispy Garlic Butter Parmesan Smashed Potatoes are the perfect combination of crispy, golden exterior and soft, creamy interior. Tossed in garlic butter and topped with parmesan, they make an irresistible side dish for any meal.

Ingredients

For the Garlic Butter:

4 tablespoons unsalted butter

1½ tablespoons olive oil

34 cloves fresh garlic, finely minced or pressed

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper

Optional: pinch of red pepper flakes for subtle heat

Optional: 1 teaspoon chopped fresh thyme or rosemary

Instructions

  1. Prepare the Potatoes: Boil the potatoes until fork-tender (15–20 minutes), drain, and let them sit to dry out.
  2. Smash the Potatoes: Place the boiled potatoes on a parchment-lined baking sheet and gently smash them to about ½ inch thickness using a potato masher or glass.
  3. Make the Garlic Butter: In a saucepan, melt butter and olive oil over medium heat. Add garlic, salt, and pepper. Cook for 1–2 minutes until garlic is fragrant. Optionally add red pepper flakes or herbs.
  4. Coat the Potatoes: Pour the garlic butter mixture over the smashed potatoes, making sure to coat each one generously.
  5. Add the Parmesan: Sprinkle freshly grated parmesan evenly over the potatoes.
  6. Bake to Crispy Perfection: Preheat oven to 425°F (220°C). Roast for 20–25 minutes until golden and crispy. Broil for 1-2 minutes for extra crispiness.
  7. Serve: Garnish with more herbs or parmesan and serve immediately.

Notes

Use waxy potatoes like Yukon Gold for the best texture.

Boil the potatoes ahead of time and store them in the fridge until you’re ready to bake.

Flip the potatoes halfway through baking for an even crispier texture.
