1 cup water (adjust based on slow cooker size)

3 cloves garlic, minced

1 bay leaf

2 tablespoons sugar

2 tablespoons cider vinegar

½ teaspoon ground black pepper

Instructions

  • Place corned beef in slow cooker, fat side up.

  • Add garlic, bay leaf, sugar, cider vinegar, and black pepper.

  • Pour in 1 cup water, just enough to cover bottom without submerging beef.

  • Cover and cook on low for 8 to 10 hours until tender.

  • Remove beef and place on foil-lined baking sheet.

  • Preheat oven broiler.

  • Broil for 5 to 7 minutes until surface is crispy and caramelized, watching closely.

  • Let rest for 10 minutes before slicing and serving.

Notes

Add carrots, potatoes, and cabbage during last 2 hours for a complete meal.

Substitute brown sugar for white sugar for deeper sweetness.

Enhance flavor with whole peppercorns and mustard seeds.

Increase cider vinegar by 1 tablespoon for tangier flavor.

Serve with mustard or horseradish sauce.

Store leftovers refrigerated up to 4 days; reheat gently. Freeze for up to 3 months.
