Ingredients

Vegetables and Herbs

  • 2 cups cauliflower, chopped
  • 2 cups broccoli, chopped
  • 1 cup red cabbage, chopped
  • 1 cup carrots, chopped
  • 1-1/2 cups fresh parsley, chopped
  • 2 celery stalks, chopped

Nuts and Seeds

  • 1/2 cup raw almonds, chopped
  • 1/2 cup raw sunflower seeds
  • 1/3 cup organic raisins

Vinaigrette

  • 3 Tbsp olive oil
  • 1/2 cup lemon juice
  • 1 tablespoon fresh ginger, peeled and grated
  • 2 tablespoons clover honey
  • 1/2 teaspoon sea salt

Instructions

  1. Prepare the vegetables and herbs: Either chop all the vegetables and herbs finely using a sharp knife or pulse them individually in a food processor a few times until finely chopped. Be careful not to purée; you want a crunchy texture.
  2. Mix the salad: Place the chopped cauliflower, broccoli, red cabbage, carrots, parsley, and celery into a large bowl. Add the chopped almonds, sunflower seeds, and organic raisins to the bowl.
  3. Make the vinaigrette: In a mason jar, combine the olive oil, lemon juice, freshly grated ginger, clover honey, and sea salt. Seal the jar and shake well until the ingredients emulsify. Alternatively, whisk all the vinaigrette ingredients vigorously in a small bowl.
  4. Toss the salad: Pour the vinaigrette over the salad ingredients and toss gently but thoroughly until everything is evenly coated.
  5. Chill before serving: For best flavor, refrigerate the salad for up to one hour before serving to allow the flavors to meld and the vinaigrette to infuse the vegetables.
