Ingredients

Whipped Feta Mixture

  • 1 (8-ounce) block feta cheese, crumbled
  • ½ lemon, juice and zest
  • 1 tablespoon honey

  • ¼ teaspoon pepper
  • ¼ cup olive oil

Cucumber Base

  • 2 large hot house cucumbers, cut into ½ inch slices

Instructions

  1. Prepare Whipped Feta: In the bowl of a food processor, combine the crumbled feta cheese, lemon juice and zest, honey, and fresh dill. Pulse the mixture 4-5 times to start blending the ingredients uniformly. Then, with the processor running continuously, slowly stream in the olive oil until the mixture becomes completely smooth and creamy.
  2. Assemble Cucumber Bites: Arrange the cucumber slices on a serving platter. Using a spoon, place a generous dollop of the whipped feta mixture on top of each cucumber slice. Garnish each bite with additional fresh dill for color and flavor.
