Cucumber Onion Salad is a refreshing and tangy dish featuring crisp cucumbers, sharp onions, and a sweet-vinegary dressing. Perfect for summer gatherings or as a light side dish, this easy-to-make salad is both healthy and flavorful, offering a cool, crisp bite with every serving.

Ingredients

3 cucumbers

1 onion

1 cup vinegar (white or apple cider)

1 cup water

¼ cup granulated sugar

Instructions

  • Prepare the vegetables: Peel the cucumbers if desired, then slice them thinly into rounds. Thinly slice the onion as well.

  • Make the dressing: In a bowl or jar, combine the vinegar, water, and granulated sugar. Stir until the sugar has dissolved.

  • Combine the vegetables and dressing: Place the cucumber and onion slices in a large bowl. Pour the dressing over the vegetables and toss to coat.

  • Chill the salad: Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

  • Serve: After chilling, toss again and serve chilled.

Notes

Add herbs like fresh dill or parsley for extra flavor.

For a spicy version, mix in red pepper flakes or finely chopped jalapeño.

Substitute granulated sugar with honey or maple syrup for a more natural sweetness.

Sweet onions (like Vidalia) provide a milder, sweeter flavor if preferred.
