This refreshing Cucumber Onion Salad is a crisp, flavorful dish that combines the freshness of Persian cucumbers, the sweetness of Vidalia onions, and a tangy, slightly sweet dressing. Enhanced with fresh dill, it’s a perfect side dish, snack, or healthy addition to any meal. Quick to prepare and easily customizable, this vibrant salad is perfect for any occasion.

 

Ingredients

1 1/2 lb Persian cucumbers (sliced into circles or half circles; ~5 cups)

1 cup Vidalia onion (or any sweet onion; sliced into thin quarter moons)

3 tbsp Fresh dill (chopped)

1/4 cup Olive oil

1 1/2 tbsp Lemon juice

1 1/2 tbsp Honey (or sugar-free honey for a low-carb option)

3/4 tsp Sea salt (to taste)

1/4 tsp Black pepper (to taste)

Instructions

  1. In a large bowl, combine the sliced cucumbers, Vidalia onions, and chopped fresh dill.

  2. In a small bowl or jar, whisk together the olive oil, lemon juice, honey, sea salt, and black pepper until the dressing is well combined.

  3. Pour the dressing over the cucumber and onion mixture, tossing gently to coat everything evenly.

  4. Allow the salad to sit for 10–15 minutes to let the flavors meld together. This also helps the cucumbers release some of their water, making the salad even more refreshing.

  5. Serve immediately, or refrigerate for up to 2 hours before serving for a chilled option.

Notes

For extra flavor, swap the fresh dill for other herbs like mint, parsley, or thyme.

Adjust sweetness by adding more or less honey, or use a sugar-free sweetener like stevia or monk fruit for a low-carb version.

Add protein such as grilled chicken, shrimp, or feta cheese for a more substantial meal.

Swap lemon juice for vinegar (apple cider or white wine vinegar) for a more tangy dressing.

Spice it up by adding red pepper flakes or sliced jalapeño for a kick.
