  • 2 medium carrots, sliced into coins
  • 1 cup frozen peas
  • 2 tablespoons fruit chutney
  • ½ teaspoon salt or to taste

Instructions

  1. Heat the oil: Heat the vegetable oil in a large frypan or skillet over medium-high heat to prepare for frying the sausages.
  2. Cook the sausages: Add the beef sausages and fry, turning often, until browned all over and nearly cooked through. Remove them from the heat and allow to cool slightly before cutting into bite-sized pieces.
  3. Sauté the onion: Using the same pan, add the thinly sliced onion over medium heat and cook, stirring often, until the onion becomes translucent.
  4. Add garlic and spices: Add the minced garlic and sauté for about a minute, then stir in the curry powder and plain flour. Continue cooking and stirring for another minute to develop the flavors.
  5. Add stock and carrots: Pour in the beef stock and add the sliced carrots. Bring the mixture to a boil, then reduce the heat and simmer for around 5 minutes until the sauce thickens slightly.
  6. Finish the curry: Stir in the fruit chutney and salt, then immediately add the cooked sausage pieces and frozen peas. Cook for another 3-4 minutes until everything is heated through and the sauce is thickened to your liking.
