  • 1 can (15oz / 430g) chickpeas, drained, reserving some of the water
  • 1 small carrot, grated
  • ¼ white onion, finely chopped
  • Handful fresh parsley leaves, chopped
  • ¼ cup chickpea flour
  • 3 tablespoons grated Parmesan cheese
  • ½ teaspoon cumin powder
  • ½ teaspoon baking powder
  • Salt and black pepper to taste
  • Olive oil spray
  • Optional garnish: sesame seeds

  • Greek yogurt sauce

Instructions

  1. Prepare the chickpea mixture: Drain the canned chickpeas and reserve some of the liquid. In a food processor or mixing bowl, lightly mash the chickpeas, leaving some texture for bite. Add the grated carrot, finely chopped onion, and fresh parsley.
  2. Add dry ingredients and season: Mix in the chickpea flour, grated Parmesan, cumin powder, baking powder, salt, and black pepper. Incorporate enough reserved chickpea liquid to achieve a sticky but manageable batter consistency.
  3. Form the fritters: Shape the mixture into small patties or fritter shapes with your hands. If desired, sprinkle sesame seeds on top for garnish.
  4. Preheat the pan: Spray a non-stick skillet or frying pan lightly with olive oil and warm over medium heat.
  5. Cook the fritters: Place the formed fritters in the pan and cook each side for about 3-4 minutes until golden brown and crisp. Flip carefully to avoid breaking and cook all fritters in batches as needed, spraying more olive oil if necessary.
