Ingredients

1 cup plain Greek yogurt

1/2 cup cream cheese, softened

1/4 cup honey or maple syrup

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon vanilla extract

1/2 cup crushed graham crackers

1 tablespoon melted butter

Fresh berries (optional)

Instructions

  1. In a small bowl, mix the crushed graham crackers with melted butter until well combined. Divide the mixture evenly into the bottom of 4 small serving cups or ramekins and press down firmly to form the crust. Set aside.

  3. Spoon the cheesecake filling over the prepared crusts in the cups. Smooth the tops with a spatula.
