Ingredients

Cookie Dough

  • 3 cups freeze dried strawberries
  • 2 sticks (1 cup) salted butter, at room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 cup freeze dried strawberry powder (from the processed strawberries)
  • 1/3 cup high-quality strawberry jam

Frosting

  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons freeze dried strawberry powder (from the processed strawberries)

Instructions

  1. Prepare Strawberry Powder: In a blender or food processor, process the 3 cups of freeze-dried strawberries into a fine powder. Set aside, dividing approximately 1/4 cup for the dough and the remainder for the frosting.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  3. Make Cookie Dough: In a large bowl, beat together the room temperature butter, granulated sugar, and vanilla extract until smooth and creamy. Beat in the egg until fully incorporated. In a separate bowl, whisk together the flour, baking soda, 1/4 cup strawberry powder, and kosher salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the strawberry jam gently to infuse the dough with extra flavor.
  4. Shape and Bake Cookies: Roll the dough into tablespoon-sized balls and place them about 2 inches apart on the prepared baking sheet. Bake for 8 minutes. After 8 minutes, remove from the oven, rotate the baking sheet for even cooking, and gently tap the sheet on the counter once to flatten the cookies slightly. Return to the oven and bake for an additional 2 to 3 minutes, or until the edges are just beginning to set.
  5. Cool Cookies: Remove the cookies from the oven and allow them to cool on the baking sheet. They will continue cooking slightly from the residual heat, helping them achieve the perfect soft and tender texture.
  6. Prepare Frosting: In a bowl, mix together cream cheese, powdered sugar, hot milk, vanilla extract, and 3-4 tablespoons of strawberry powder until smooth. Add additional milk if needed to achieve a dip-able consistency.
  7. Dip or Frost Cookies: For extra strawberry sweetness, dip each cooled cookie into the frosting, or spread the frosting on top using a spoon or spatula. Allow the frosting to set before serving if desired.
  8. Storage: Store cookies in an airtight container for up to 5 days to maintain freshness.

Notes

  • You can adjust the amount of strawberry powder in the frosting based on your preference for strawberry flavor intensity.
  • Using room temperature butter ensures smooth cookie dough and better texture.
  • Flattening the cookies after the initial bake helps them spread evenly without becoming too thin.
  • If you prefer, simply enjoy the cookies without frosting for a lighter treat.
  • Ensure cookies cool completely before dipping in frosting to prevent melting.
