Ingredients

Filo Mixture

  • ¾ cups shredded filo, or Kataifi
  • 1 tablespoon butter

Filling & Topping

  • ⅓ cup pistachio butter, or Biscoff
  • 11 Medjool dates, pitted
  • 1 bar dark chocolate (about 100g), or your favorite type of chocolate
  • ½ tablespoon coconut oil (to make the chocolate shiny)
  • Crushed pistachios, optional for garnish

Instructions

  1. Prepare the Filo: Begin by gently melting 1 tablespoon of butter over low heat. Toss the shredded filo or Kataifi into the melted butter, ensuring it is well coated. Spread it out evenly on a baking tray lined with parchment paper.
  2. Bake the Filo: Preheat your oven to 350°F (175°C). Bake the buttered filo for about 10-12 minutes or until it is golden brown and crispy. Keep a close eye to prevent burning. Once baked, allow it to cool completely.
  3. Prepare the Dates: While the filo cools, make a slit in each Medjool date and remove the pit. Fill each date generously with pistachio butter or Biscoff spread, then gently close the date around the filling.
  4. Melt the Chocolate: In a double boiler or microwave, melt the dark chocolate along with ½ tablespoon of coconut oil. Stir until the mixture is smooth and glossy, which will help the chocolate coat the dates beautifully.
  5. Assemble the Dates: Dip each filled date into the melted chocolate, ensuring it is fully coated. Then, roll or sprinkle the dates with the baked shredded filo to cover them, pressing lightly so the filo sticks to the chocolate.
