Ingredients

For the Chicken

  • 4 large chicken breasts (2 lbs)
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • 2 garlic cloves, minced
  • 4 slices mozzarella cheese
  • 1 Tbsp olive oil (for sautéing)

Bruschetta Topping

  • 12 oz Roma tomatoes (3/4 lb), diced
  • 2 1/2 Tbsps basil leaves, chopped
  • 3 garlic cloves, minced
  • 1/2 Tbsp balsamic vinegar
  • 1 Tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 Tbsp balsamic glaze

Instructions

  1. Prepare the Bruschetta Topping: In a medium bowl, combine the diced Roma tomatoes, chopped basil leaves, minced garlic, balsamic vinegar, extra virgin olive oil, salt, and black pepper. Stir well to mix all ingredients and set aside to allow flavors to meld.
  2. Season the Chicken: Pat the chicken breasts dry with paper towels. Rub them all over with 2 tablespoons of olive oil, 1 teaspoon of salt, 2 teaspoons Italian seasoning, 1/2 teaspoon black pepper, and the minced garlic. Ensure the seasoning is evenly distributed for full flavor.
  3. Sauté the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through and golden brown on the outside.
  4. Add Mozzarella: Once the chicken is cooked, place a slice of mozzarella cheese on top of each breast. Cover the skillet with a lid and cook for another 1-2 minutes until the cheese melts completely.
  5. Serve with Bruschetta: Remove the chicken from the skillet and place on serving plates. Spoon the prepared bruschetta topping generously over the melted mozzarella on each chicken breast. Drizzle with balsamic glaze for a touch of sweetness and tanginess.
