These Easy Garlic Butter Beef Cheeseburger Rollups are a delicious handheld meal, blending juicy ground beef, melted cheese, and a garlic butter coating, wrapped in soft flour tortillas.

Ingredients

1 lb ground beef

½ cup shredded cheddar cheese

½ cup shredded mozzarella cheese

1 tablespoon olive oil

4 large flour tortillas

¼ cup butter, melted

3 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon onion powder

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

Optional: sliced pickles for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through (about 6-8 minutes). Drain any excess fat.
  2. Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper. Mix well to coat the beef with the seasoning.
  3. Reduce the heat to low and sprinkle the shredded cheddar and mozzarella cheeses over the beef. Stir until the cheese is melted and the mixture is combined. Remove from heat.
  4. Warm the tortillas slightly in the microwave or on a dry skillet for a few seconds to make them more pliable.
  5. Place a few spoonfuls of the beef and cheese mixture in the center of each tortilla. Roll up the tortillas tightly to form burrito-style rollups.
  6. In a small bowl, mix the melted butter with the minced garlic. Brush this garlic butter over the outside of each rollup.
  7. Heat a large skillet over medium heat. Place the rollups seam side down and cook for 2-3 minutes on each side, or until golden brown and crispy.
  8. Once the rollups are crispy and golden, remove them from the skillet. Slice them into pinwheels if desired, and garnish with sliced pickles for an extra touch.

Notes

For a spicy version, add sliced jalapeños or hot sauce to the beef mixture.

Crisp up some bacon and crumble it into the beef mixture for extra flavor.

To make it vegetarian, swap the ground beef for a meat substitute or sautéed vegetables like mushrooms, zucchini, or bell peppers.

Store any leftover rollups in an airtight container in the refrigerator for up to 3 days.

Reheat in a skillet or oven for best texture, or microwave for 30-45 seconds.
