Ingredients

2 cups Greek yogurt, strained (500g)

1/3 cup peanut butter (85g)

1/4 cup honey (60ml)

2 tsp vanilla extract

2/3 cup coconut milk (160ml)

2 oz dark chocolate, chopped (50g)

Instructions

  1. In a large mixing bowl, combine the strained Greek yogurt, peanut butter, honey, vanilla extract, and coconut milk. Stir until the mixture is smooth and well combined.
  2. Fold in the chopped dark chocolate, ensuring it’s evenly distributed throughout the mixture.
  3. Pour the yogurt mixture into a freezer-safe container and spread it out evenly.
  4. Cover the container with a lid or plastic wrap and freeze for at least 4 hours or until the ice cream is firm.
  5. When ready to serve, let the ice cream sit at room temperature for a few minutes to soften slightly. Scoop and enjoy!
