Gyeran Mari, or Korean Rolled Omelette, is a savory dish made with eggs, green onions, and carrots rolled into neat, bite-sized pieces. It’s a versatile dish perfect for breakfast, lunch, or as a side, offering a fun and flavorful twist on the classic omelette.

Ingredients

5 medium eggs

1 green onion, chopped

2 tbsp carrot, chopped or grated

¼ tsp salt

⅛ tsp black or white pepper

1 tsp neutral oil (such as vegetable or canola oil)

Instructions

  1. Prepare the Ingredients: Crack the eggs into a bowl and whisk them together with salt and pepper until smooth. Add the chopped green onion and carrot to the eggs and mix well.
  2. Heat the Pan: Heat a non-stick skillet over medium-low heat. Add 1 teaspoon of oil to the pan and let it heat up.
  3. Cook the First Layer: Pour a small portion of the egg mixture into the skillet, just enough to cover the bottom. Swirl the pan to spread the egg evenly.
  4. Roll the Omelette: Once the edges of the omelette begin to set (after about 1-2 minutes), gently roll it from one side to the other using chopsticks or a spatula. Move the rolled omelette to one side of the pan.
  5. Add More Egg: Add a bit more egg mixture to the pan, lifting the rolled omelette to let the new egg mixture flow underneath. Cook until it begins to set, then roll again from the opposite side. Repeat this process until all the egg mixture is used up.
  6. Finish Cooking: Once the omelette is fully cooked and rolled into a log, remove it from the pan. Let it rest for a few minutes before slicing it into bite-sized pieces.
  7. Serve: Arrange the Gyeran Mari on a plate and serve warm. It can be enjoyed on its own, with rice, or as part of a larger meal.

Notes

For a different flavor, substitute carrots with zucchini, bell peppers, or spinach.

For extra richness, sprinkle shredded cheese before rolling.

If you prefer a spicier version, add a small amount of gochujang or red pepper flakes to the egg mixture.

Make sure to cook the omelette on medium-low heat to avoid burning and ensure it rolls evenly.
