This easy homemade chocolate covered pecans recipe combines toasted pecans with rich melted chocolate, creating a sweet and crunchy treat perfect for snacking or gifting. The pecans are first roasted with butter and salt to enhance their flavor, then dipped in silky melted dark or milk chocolate for a decadent finish.

Ingredients

Pecans

  • 1 pound pecan halves
  • 4 tablespoons unsalted butter, cut into small cubes
  • 1 teaspoon kosher salt

Chocolate Coating

  • 20 ounces dark or milk chocolate melting wafers

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for toasting the pecans.
  2. Roast Pecans with Butter: Spread the pecan halves evenly on a large, rimmed baking sheet. Scatter the cubes of unsalted butter over the pecans. Roast in the oven for about 5 minutes until the butter melts and starts to toast the nuts. Remove and use a spatula to turn the pecans to coat them evenly with the melted butter.
  3. Add Salt and Continue Roasting: Sprinkle the kosher salt over the pecans, then return the baking sheet to the oven and roast for another 5-6 minutes. Check at 5 minutes for doneness and roast a bit longer if needed to achieve a fragrant toasted flavor. Remove from oven and cool completely.
  4. Melt the Chocolate: Place the chocolate melting wafers in a small microwave-safe bowl. Microwave on medium or defrost setting for 30 seconds, stir thoroughly, then continue microwaving in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  5. Coat Pecans in Chocolate: Add a handful of cooled pecan halves into the melted chocolate and stir to coat them fully. Using kitchen tweezers, a slotted spoon, small tongs, or a fork, remove the coated pecans one by one, letting the excess chocolate drip off.
  6. Cool and Harden: Place the chocolate-coated pecans on parchment or wax paper to cool and harden. This process takes approximately 45 minutes at room temperature.
  7. Serve or Store: Once hardened, serve the pecans immediately or store them in an airtight container for freshness.

Notes

  • Use high-quality chocolate melting wafers for smooth melting and best flavor.
  • Be careful not to over-toast the pecans to avoid bitterness.
  • Allow the coated pecans to cool completely in a cool, dry environment for best texture.
  • You can substitute salted butter, but adjust the added salt accordingly.
  • Store the chocolate covered pecans in an airtight container at room temperature for up to two weeks.
