This easy homemade fruit sorbet is refreshing, naturally sweet, and perfect for hot days. Made with frozen pineapple, lime juice, and a touch of sweetener, it comes together quickly in a blender for a light, dairy-free dessert.

Ingredients

4 cups frozen pineapple chunks

1 tablespoon fresh lime juice

3 to 4 tablespoons honey, maple syrup, or sugar (adjust to taste)

1/2 cup coconut water or plain water

Fresh mint leaves (optional, for garnish)

Pineapple wedges (optional, for serving)

Instructions

  1. Add frozen pineapple chunks, lime juice, sweetener of choice, and coconut water (or water) to a high-powered blender or food processor.
  2. Blend until smooth and creamy, stopping to scrape down the sides if needed.
  3. Taste and adjust sweetness if necessary.
  4. Serve immediately for a soft-serve texture, or transfer to a freezer-safe container and freeze for 1 to 2 hours for a firmer consistency.
  5. Scoop into bowls or cones and garnish with fresh mint leaves and pineapple wedges, if desired.

Notes

For a creamier sorbet, substitute coconut milk for coconut water.

Mix in other frozen fruits like mango, strawberries, or peaches for variety.

Add a splash of rum for an adults-only version.

Store leftovers in an airtight container in the freezer for up to 1 week.

If sorbet becomes too firm, let it sit at room temperature for 10 minutes before serving.
