For the Cake:
1 package yellow cake mix (regular size)
1 can (11 ounces) mandarin oranges, undrained
4 large egg whites, room temperature
1/2 cup unsweetened applesauce
For the Topping:
1 can (20 ounces) crushed pineapple, undrained
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 carton (8 ounces) reduced-fat whipped topping
For the Cake:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or line it with parchment paper.
In a large bowl, combine the cake mix, undrained mandarin oranges, egg whites, and applesauce. Mix until well combined.
Pour the batter into the prepared dish and spread it evenly.
Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool completely in the pan.
For the Topping:
In a mixing bowl, combine the undrained crushed pineapple, sugar-free vanilla pudding mix, and reduced-fat whipped topping. Stir until smooth and well combined.
Once the cake has cooled, spread the topping evenly over the cake.
Chill the cake in the refrigerator for at least 1 hour before serving.
For a sweeter cake, you can add extra sugar or honey to the batter or topping.
Add chopped nuts like pecans or walnuts for some extra crunch.
Use fresh fruit instead of canned if desired—just adjust the juice or syrup amount for the topping.
