This Easy Reese’s Peanut Butter Cup Pie is a decadent no-bake dessert that combines a rich chocolate cookie crust with a creamy peanut butter filling, topped off with peanut butter chips, chocolate chips, and mini Reese’s Peanut Butter Cups. Perfect for any peanut butter and chocolate lover, this pie sets in the refrigerator and requires no baking.

Ingredients

Crust

  • 20 ounces chocolate sandwich cookies (e.g., Oreos)
  • 6 tablespoons butter, melted

Filling

  • 1½ cups heavy cream
  • 8 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 tablespoon vanilla extract
  • ⅛ teaspoon coarse kosher salt

Toppings

  • Peanut butter chips
  • Chocolate chips
  • Mini Reese’s Peanut Butter Cups

Instructions

  1. Prepare the crust: In a food processor or a large Ziplock bag, crush the chocolate sandwich cookies into a fine crumble. Mix in the melted butter until the mixture is well combined and holds together.
  2. Form the crust: Transfer the cookie crumb mixture into an 8” or 9” pie dish. Firmly press it into an even layer to form the crust. Place the pie dish in the freezer to chill while you prepare the filling.
  3. Whip the cream: In a large bowl, beat the heavy cream until stiff peaks form. Set aside for later.
  4. Mix cream cheese and sugar: In a separate large bowl, beat the softened cream cheese with granulated sugar for 1-3 minutes until smooth and well combined.
  5. Add peanut butter and flavorings: Add the creamy peanut butter, vanilla extract, and coarse kosher salt to the cream cheese mixture. Beat for 1-3 minutes until fully incorporated and smooth.
  6. Combine whipped cream and peanut butter mixture: Gently fold the whipped cream into the peanut butter mixture using a spatula. Fold carefully until the mixture is smooth and no streaks remain.
  7. Fill the pie crust: Transfer the peanut butter filling onto the chilled cookie crust in the pie dish, spreading it evenly.
  8. Garnish: Top the pie with peanut butter chips, chocolate chips, and mini Reese’s Peanut Butter Cups as desired for decoration and added texture.
  9. Chill: Cover the pie and refrigerate it for 2-3 hours to allow it to set and chill fully before serving.

Notes

  • This pie requires at least 2-3 hours chilling time but can be refrigerated overnight for firmer texture.
  • Use smooth and creamy peanut butter for the best texture in the filling.
  • Crushing the cookies finely helps the crust hold together better.
  • If you don’t have a food processor, place cookies in a Ziplock bag and crush with a rolling pin.
  • The pie is best served chilled and kept refrigerated until serving.
