Ingredients

Meat

  • 1 pound ground beef (or ground chicken, Italian sausage, or ground turkey)

Vegetables

  • Optional: 1 cup sliced mushrooms
  • Optional: 1 cup fresh spinach

Tomato Base

  • 2 cups marinara sauce (store-bought or homemade)
  • 2 tablespoons tomato paste

Pasta

  • 8 ounces regular lasagna noodles, boiled and drained (can use dry oven-ready or gluten-free noodles with added liquid as needed)

Cheese

  • 1 cup ricotta cheese (or cottage cheese as an alternative)
  • 1 cup shredded mozzarella cheese

Liquids and Seasoning

  • 1 cup beef or chicken broth (can substitute with water)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red chili flakes (optional)

Instructions

  1. Prepare Pasta: Boil the lasagna noodles in salted water according to package instructions until al dente. Drain and set aside.
  2. Cook Meat and Vegetables: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart. If using, add mushrooms and cook until softened. Season with salt, pepper, Italian seasoning, and chili flakes. If using spinach, add it last and cook until wilted.
  3. Deglaze the Pan: Pour in the white wine to deglaze the skillet, scraping any browned bits from the bottom. Let the wine simmer for 2-3 minutes to reduce slightly.
  4. Add Tomato Sauce: Stir in the marinara sauce, tomato paste, and broth (or water). Mix thoroughly and bring to a simmer.
  5. Layer Lasagna Noodles and Cheese: Break the cooked noodles into large pieces and add them to the skillet, stirring gently to combine and coat them with sauce. Dollop the ricotta cheese evenly over the skillet, then sprinkle the mozzarella and Parmesan cheeses on top.
